Christmas Party Dj Pudding  - Give it a Spin !!

 

 Ingredients

  • 400g sultanas
  • 300g raisins,
  • 100g currants
  • 150g dried figs, chopped
  • 100g dates / any other preferred dried fruit - eg papaya
  • 125g mixed candied peel, chopped
  • 50g fresh peel, chopped
  • 100g apricots (dried), chopped
  • 75g dark glacé cherries, halved
  • 300ml brandy plus a little for flaming
  • 2 apples
  • 1 orange juice and zest
  • 6 eggs
  • 250g shredded suet
  • 350g soft brown sugar
  • 250g fresh breadcrumbs
  • 180g self-raising flour
  • A little Mixed spice or  powdered ginger, cinnamon and grated nutmeg (to suit taste)

    METHOD

     1. You will need two 2 litre plastic pudding basins and lids, buttered,  two circles of greaseproof paper, buttered, large enough to cover the top of each pudding, with a single pleat folded down the centre of each.

    2. Soak the sultanas, raisins or currants, figs, candied peel, apricots and cherries in the brandy overnight. Give it a good stir now and again.

    3. Mix the grated apples, orange juice and zest, beaten eggs, suet, sugar, crumbs and pour in a very large mixing bowl, then stir in the soaked fruit and the spice. Divide the mixture between the buttered pudding basins. Cover with the greaseproof paper, folded with a pleat in the centre.

    4. Pop the lids on and steam for three and a half hours. Allow the puddings to cool, then remove the greaseproof paper, cover tightly with cling, lm and the plastic lid and store in a cool, dry place till Christmas.

    5. To reheat: steam the puddings for a further three and a half hours. Turn out and flame with brandy

     

    Christmas Party Dj Cookies - Munch to da Beatz !!

     

    Ingredients

    • 3/4 cup butter, softened
    • 1/4 cup sugar
    • 2 cups all purpose flour

    METHOD

    Preheat oven to 350 degrees or Gas Mark 5.

    Mix the butter and sugar in a large bowl until creamy consistency. Stir in the flour. If the dough is too dry and crumby and does not stick together you will need to mix in an additional 1 to 2 tablespoons of butter.  Roll dough to half inch thickness and cut dough with cookie cutters into desired shapesThe dough can even be cut with a knife into wedges or strips for interesting designs. 

    Bake about 20 minutes or until set. 

    Remove from oven and transfer to a wire rack to cool
